Biryani is a fragrant rice dish layered with colorful vegetables and infused with a blend of spices. The vibrant hues and medley of textures, from tender vegetables to fluffy rice, create a visual and sensory feast that invites us to savor each bite mindfully.
Ingredients
- 1 cup basmati rice
- 2 cups water
- 2 tablespoons ghee or olive oil
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon salt (adjust to taste)
- 1 cup mixed vegetables (such as carrots, peas, bell peppers, and cauliflower)
- Fresh cilantro, for garnish
Instructions
- Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain before cooking.
- In a large pot, bring 2 cups of water to a boil. Add the soaked and drained rice. Cook on medium heat until the rice is about 70% cooked (about 7-8 minutes). Drain any excess water and set the par-cooked rice aside.
- In a separate pan, heat the ghee or olive oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the thinly sliced onion to the pan and sauté until golden brown and caramelized.
- Stir in the minced garlic and grated ginger. Cook for another minute until fragrant.
- Add the ground coriander, turmeric powder, garam masala, and salt. Mix well to coat the onions with the spices.
- Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until slightly tender.
- Layer the par-cooked rice over the vegetables in the pan. Cover with a tight-fitting lid and cook on low heat for 10-15 minutes to allow the flavors to meld together and for the rice to fully cook.
- Remove from heat and let the biryani rest, covered, for an additional 5 minutes.
- Garnish with fresh cilantro leaves before serving. Serve the fragrant vegetable biryani mindfully, savoring each spoonful of aromatic flavors.
